When I first purchased these spells, they didn't have the [STR],[DEX],[INT] parts their name. I don't know when this was added, but I only just noticed it yesterday. Can someone explain to me what exactly this entails?

I realize it has to do with the mentioned stat, but I am not sure what exactly it applies. Do the spells apply accuracy only to the respective damage type? Do they apply accuracy to all damage (regardless of type), but simply uses the mentioned stat for something? Or is it something entirely different than I am not even thinking of?

It means the spell scales off using that stat. The bth boost is universal.
E.g you're a Warrior with 250 STR using the DEX version but don't have any DEX trained. This means you won't get the maximum bth boost from casting the spell
