Can the spells Draconate, Weredragon Breath and Demomorphosis stack? So that the monster is a Were-Dragon-Demon? If so would the blade Guardian NightSever trigger?

Yup, they do. Also, nightsever will work as you’d expect. Almost all trigger items will work unless they’re really really old
