Are there any items in the game (aside from Quadforce) that can help a 0 str character make use of melee weapons? For example, an armor that converts melee damage from weapons into magic damage?

No. That would defeat the purpose of making magic weapons weaker than melee weapons.

There is the astramorph misc, though, at max lvl 126 that transforms you into shearhide form (L126) and moves all of your INT into STR, then dex, etc but youre in that armor. And the STR caps at 175.
