If I understand correctly if I don't purchase anything I am able to access the shop later and buy something if I desire, right? However, does this stack? If I open the rare shop twice and don't purchase anything both times will I be able to access the shop twice and purchase something twice at a later time? Thanks in advance.

Yes, the unused boxes stack with each other.

You can visit your account page (Character List (click character) > Gold Prize Swap) to check how many boxes of each type you have.
