when equipping the pet, is the stat increase to CHA (+200) supposed to appear in the HUD of the player? I don't seem to get the bonus while the pet is equipped

It applies only to Eulin.

 It has the great power of Eulin to be cute. Sometimes he grow a bit bigger for a second.

And +200 CHA means that Eulin gets more gold and exp per battle by just standing there.

Correct. All pets' bonuses/resistances only apply to the pet as they are their own player, and do not impact the player character's stats. Only pets with special attacks can buff the player character. It's essentially a cosmetic pet.
