Is it garenteed that the first time I post an entry will be the only one the judges look at, or is it possible they'll see my edited one?

Not guaranteed, but most likely. If you happen to post when most are offline, then it'll give you some time to edit

Typically, much of the judging happens after the contest has been closed and locked.

It would be hard to keep track of which entries had been read when there was a constant flow of new ones being made.
