Is there a way to set your text color without choosing every time you post? Also how does this guy do this: colorful post. He doesn't choose color for each character... does he?

There is not really a way to avoid choosing the color, you can pick it from the list or copy/paste the code for it when you post, both take about the same time though. As for the user's text, there are some online text color gradient generators that generate the color codes to do that. Those generate the different colors for every letter, again it is a bit time consuming and I think it detracts from the readability of the post.
