Just curious, if say you sent a message to a person and that person hasn't read the message yet, will deleting the message in your outbox also delete the message in that person's inbox?

No, the two inboxes should be mutually exclusive. What you delete in your inbox or outbox should have no effect on what was already sent and is sitting in someone else's inbox.
