Locking Appearance allows you to basically well, lock in an appearance of a previous rank of character you've had while using the cards of your evolved form. For example, let's say you're using Revontheus (Veteran form) if you go to his character tree and click on the previous form, you can click on the lock appearance button afterwards, which will make you look like your egg, while having the cards of Revontheus (Veteran). Keep in mind that only you will be able to see the appearance lock, I believe this is to prevent people from gaining an unintentional advantage in a pvp match.
People are collecting a second rev egg either because they want to evolve their rev next year, while being able to get another veteran rev next year or because of this:

This tweet by Revontheus also states that both the egg and the Veteran form of Revontheus will be perma-rare. People have speculated that this means that next year, when he's released again, he'll be Katana Revontheus, as opposed to Keyblade Revontheus, the one we have now.
