Indicating that all characters, names, and areas are copyrighted to Artix Entertainment LLC. is good enough.
As long as you're not making a direct profit from your story, there shouldn't be any copyright issues. Just make sure to give credit and indicate that these characters are owned by Artix Entertainment LLC.

If the project is to be judged, however, there could be issues. Can you elaborate on the project? Is it just a creative writing assignment, or is it for competition?

If you are using it as a backdrop in your writing, for entertainment, it would be considered fanfiction, which we do love. As long as you aren't entering any contests or making money off of it, you should be good to go! You will have to share your final story with us in L&L.
Make sure you give AE credit for the content, though. That will cover you.
