So, I'm going to attempt the Wicked King Challenge mode to get the Underwyrmling. What strategies can I use with my current setup? Is he immune to Control? If he is, it pretty much throws my strategy of Love Potion/Shadowfeeder and spamming Kindred Strike out the window.

There isn't any monster that can eliminate the player's attempt of Celerity in game due to it not being an immobility status condition that some recent bosses have Boss Boost +X boost on saves against immobility.

Kindred is one of the strategies to take down the boss in a matter of turns, the longer the battle the harder the Prismatic burn will hit on the player.

Wicked King's greatest source of damage comes from his Prismatic Burn which hurts you at the end of your turn, not his actual attacks. With that said, he hasn't aged particularly well and a couple of stuns plus Kindred striking with Bell Shell misc for healing can bring him down fairly easily at this point.

Yeah, I noticed that. Luckily, you can try as many times as you want. I can just use the Normal fight to recharge my Kindred Strikes and SP with the Essence Orb, then run away and get all my health back. I'll have to go and get the Bell Shell, though. I run out of potions, which makes me have to do the quest again.

Also, can you get the Underwyrmling from the normal battle, or do you NEED to beat the Challenge Battle? I know it's one of the best Fire pets out there due to its SP-draining attack.

Underwyrmling is from the Challenge mode only.

Yes, you need to beat the challenge fight to get the pet. Underwrynling is the reward for beating it (much better than just a title in my opinion like the war torn dragon) though you also get a title.

I believe one of the monsters from the moderator challenge gauntlet can steal your celerity

You can just stunlock him with HSVV/WKZ/Kindred + CIT + Love Potion + Shadowfeeder + Essence Orb + Purple Rain. Since you have 0 luck, get either Ambush Potion or Whispering Raiment to always go first. For item, use either Bell Shell or an item boosting your str. The issue is that you have no poelalas, so I don't know if you will be able to kill him in time before you die to prismatic burn/essence orb (This is definitely not a problem with Kindred, but might be an issue with HSVV/WKZ). If you end up going second or failing an attempt, I suggest just use essence orb back to full sp in the next fight, flee from the fight and try again (you will go back to the point where you have the option of selecting which boss fight you want to face when you flee).

late but using your floating pie pet to heal him (1st or 2nd attack, depending on how many spirits on you) will help with reducing the damage amp of the spirits. You should probably be able to out-dps the heals from your pet.
