I'm level 41 right now is there any bosses i cant beat to get decent items ? I have some paid items (sun god/time harvestor/chaos weaver set) and few items from csyro ring and stuff.

I can't beat any1 there.

You wont be able to beat anyone yet at that level except the first set of Challenge. Fight the dragons in the center column using a DragonSlayer. You can get that in Dragesvard and train it till you get the skill that poison dragons by 10% every turn. After that, all you have to do is survive 10 turns

So at what level do I even have any chance against all these bosses ?

Also there one challenge that has a maze full of elementals (not the tower one) that I managed to finish but what do I trade the reward i get from it with ?

The problem isn't that you can't beat them, but it's an endgame feature - it expects you to be a high level, well-geared, well prepared player.

I am non-DA non-DC and I have beaten at lvl 40 Uthuluc, Leorilla, Groundhog Dave, The Abomination, Legion Crawler, Blood Moon and those dragons - it is possible. But you have much better chance with endgame gear and higher levels. That's all.

The final Matrix maze challenge gives you a component, that combined with rewards from The Abomination and Legion Crawler challenges can be traded for re-skin Necromancer armor. Also you get a badge.
