By that I mean challenges that aren't that hard but give some decent gear to help with the hard ones.

The Sea Chicken and the Undead Duo (Crawler & Centaur) are two fairly easy challenges that have good drops.
This playlist could help you tackle the fights.
This playlist also features the challenges that drops essential gear for your inn progression.

In addition, this would be an example of a good loadout outside of inn rewards:

Weapon: Ultra OmniKnight Blade
Helmet: Joker's Madness/Tytanvisage Helm
Cape: Unael Protectorate/Wings of the Thousand Flames
Ring: Unhallowed Deathknight Circlet
Belt: Ogorek's Treasure/Lost Elf's Belt/Ribbon of Compromise
Necklace: Grub Necklace
Trinket: Uaanta's Blaster (Charging)

Yeah, off the top of my head: Emperor of Sea Chickens, Unravaler/Jack + Groupies, Undead Challenge, and the Otherworldly Board. The Timetorn Matrix is also less of a challenge than a test of endurance.

There are other easy inn fights such as Envy or the entire Dragon Board, but they don't give useful rewards (at least no on their own).

I've made a series of playlists on how to approach the Inn from scratch ( Season One, Two, Three, ...). Even if you don't want to copy the strategies, the order I approach the challenges is relevant.
