I recently got the Doomknight armor, and am planning to use it for the Inn challenge bosses. However, I'm not familiar with using the class, and I'm not sure if any of the skill rotations suggested in the Guides section of the forums work for the Inn bosses as well (given their difficulty relative to the rest of the game).

Could anyone give me some advice on using the class to it's maximum effectiveness? Information like stat distributions; whether gear should focus on offence, defence, or a balance; and useful skill rotations would be very much appreciated, in addition to any other advice.

You could use the DragonFable Endgame Wiki for a more in depth guide.
The rotation section in the endgame wiki could work on some bosses without a problem, although you do have to switch things up at some point as bosses do differ on what they do

You could also watch Youtube videos on how Doomknight tackles inn challenges.
AstralCodex's videos are good examples.

For Doomknight's stat distribution, You'd want 200STR / 200END / 45 on either WIS, CHA, or LUK for Inn Challenges.

Here's a good loadout that you could grab before tackling some inn challenges.
Weapon: Ultra OmniKnight Blade / Soulforged Scythe
Helmet: Joker's Madness / Tytanvisage Helm
Cape: Wings of the Thousand Flames / Unael Protectorate / Kickstarter Cape / Hidebehind
Ring: Unhallowed Deathknight Circlet
Belt: Ogorek's Treasure / Ribbon of Compromise
Necklace: Grub Necklace / Slimy Necklace
Trinket: Uaanta's Blaster IV (Charging)
