This should be in Q&A, but while you're still here:
1. Werewolf and Vampire variants have all have 39 resist to their primary element. Though you can check the armor defenses in game by going to the details tab on the far right whenever you select an item in the shop menu.
2. At this moment, no. There are some dual element shields (Not toggleable compression) like Fur of Igneus (Fire/Ice), Nova Knight Aegis (Fire/Energy), and Enigmatic Assassin Shield (Ice/Wind). Refer to this guide for more detailed help on this topic.
3. Off the top of my head there's Urn of Prevailing Winds which defends to -10 wind but this has an upkeep. Keep in mind -10 isn't the standard anymore, but .5x is now the standard. Most miscs that are defensive have an upkeep cost so anything with no upkeep is going to be a very old item.
