i notice thers a lot more bosses that you can't exactly Burst dps to death these days, and as much as i like playing this build, im starting to wonder how were supposed to contend with these sorts of things,do i need particular types of defensive gear?

Yes, for some bosses you'll need specific items to beat them.

what are some good examples of bosses and items?

i never did beat the demon king and i think theres a few others.
