Just a thought I had earlier; is there a list of all the enemies you can "interact" with? Such as clicking on them during the fight or after they're killed, ones that talk to you, etc..

There isn't an official list of such monsters anywhere, however several quests have reagents to hunt for:
Yulgar's Attic
Claw Tip Landing
Dragonslayer Class Level 4
Lucretia's Apothecary
