I'm also wondering if a Poelala build is still viable after the stat cap was raised to 250. Ps. I really like how the Poe Mage plays, are there any other fun builds I should try out with new stat cap.

Poelala/Dunamis/Thernda are even more viable after the cap boost. From what I see the 2 most popular builds as of late are Pure Warriors and Pure Mages. Not to imply other builds don't work, the former are just more popular. I just came back from a hiatus myself and am playing around with my build. You are super close to the level cap too, speaking of caps. Get there ASAP so you can get more endgame level equipment.

Does Poelala's effect last for the rest of combat or just the turn it is cast? Was confused as to why I should use any other pets.

Poelala's effect only lasts for as long as she is equipped. As for why ever using any other pet...? Well, there is hardly any reason to. Stick to Poelala forever. I believe L-ash is suggesting other pets because they bring some utility that might be worth it in a few specific challenge battles though.

There is at least two challenge fights that require paralysis or another source of elemental damage to offset the boss' strategy against the player, namely Sea Titan with PikaZard and Wicked King with a Fire pet, both bosses unlock a shop with more pets, namely Cephalopod and Underwyrmling. Having elemental pets to fill the rest of the slots is a good idea when certain bosses have damage caps, where multiple hits are preferred instead of a booster pet/guest which may cause the extra damage to be limited by the cap.
